Process: Honey

For most of the over 300,000 people living in Kerinci Highland Valley, surrounded by Kerinci Seblat National Park, a UNESCO World Heritage site, agriculture is the only source of income. The 600 small producers participating in Santiang Exports’ initiatives balance coffee cultivation and conservation through sustainable practices that maintain rainforest borders.

The “Honey” process used for this lot involves drying pulped cherry on raised beds then dry milling versus typical Gilang Basah, partial drying in sacks then wet hulling, allowing clean, heavy body, herbal-fruit notes to shine through.
